Berries and Cream French Toast
Berries and Cream French Toast

 

Prep time: 10 min  Cook time:  6-8 min  Yield: 2 servings

Ingredients:

Nonstick cooking spray

2 large eggs

1/4 cup fat-free milk

1/4 teaspoon vanilla extract

Nonstick cooking spray

1/4 cup cream cheese, softened

4 slices whole-grain French bread

1 cup fresh berries (raspberries, strawberries, blueberries, or blackberries)

Powdered sugar (optional)

Maple syrup (optional)

Directions:

     1. Heat a large skillet or griddle on medium heat and coat it with the nonstick cooking spray.

     2. In a small bowl, beat the eggs, milk, and vanilla with a fork.

     3. Dip each slice of French bread into the egg mixture, soaking each side for 10 seconds.

     4. Place the soaked bread slices on the skillet and heat them for 3 to 4 minutes, or until they’re brown on the bottom. Flip the bread over and heat for 3 to 4 minutes, or until they’re brown.

     5. Spread one side of each piece of bread with 1/4 of the cream cheese and top with 1/4 cup of berries. Dust the French toast with powdered sugar and serve with syrup (if desired).

Warning: Cook your French toast until it’s nicely browned so that the eggs in the batter are completely cooked through. No raw eggs during pregnancy!

Vary It! If berries aren’t in season, improvise with thawed frozen berries or use your fruit of choice.  And if you’re not a fan of cream cheese, try using peanut butter instead for a PB&B (Berries) French toast.
