Don't let the slightly lengthy list of spices scare you away from this amazing recipe.  Just line those bottles up, and measuring, combining and mixing these ingredients will be a snap! Your taste buds will thank you... and we thank Executive Chef Ryan Atrim of The Ritz Carlton in Palm Beach for sharing one of his holiday specialties.

Gingersnap Cookies

Yields 4 dozen

Prep time 30 minutes

Ingredients

12 oz           Butter

12 oz           Brown Sugar

4 each          Eggs

4 oz            Molasses

6 cups          All Purpose Flour

1 Tsp           Baking Soda

1 ½ tsp         Cinnamon

¾ tsp           Cloves

¼ tsp           Salt

¾ tsp           Allspice

¾ tsp           Ginger

4 oz            Crystal Sugar

Prepare

In a mixer bowl add the butter and sugar.  Place the bowl in the mixer with the whisk attachment.  Whisk the butter and sugar mixture until the mixture is a light yellow color and fluffy.  Add the eggs & molasses and continue to mix until fully incorporated.  Add all remaining ingredients and mix, scrapping the bowl as needed to fully incorporate the ingredients.

Preheat oven to 375 degrees.  Scoop tablespoon size dough onto parchment lined cookie sheet.  Press down the cookie to size you would like and sprinkle crystal sugar on top.  Bake until golden brown approximately 8 minutes.
