This recipe for holiday potatoes is a little sweet, a little nutty and a teeny bit spicy. All these ingredients add up to a delicious side dish for your family feast or holiday dinner party. It comes to GalTime from The Spotted Donkey Cantina in Scottsdale, Arizona.
INGREDIENTS:
4 Sweet Potatoes
1/4 cup brown sugar
4 oz. butter, cubed
¼ cup honey
1 egg
1 teaspoon pureed chipotle chile
2 tablespoons heavy cream
Salt and pepper to taste
2 cups flour
4 eggs beaten
2 cups chopped pecans
PREPARATION:
1. Split sweet potatoes in half, sprinkle with brown sugar and butter. 2.
Bake uncovered at 375 degree oven for 45 minutes or until soft.
3. Remove the meat of the potato from the skins and place in a bowl.
4. Add honey, egg, chipotle chile, heavy cream, salt and pepper
5. Mash all ingredients together until smooth
6. Form into desired sized balls
7. Dip the sweet potato balls into flour, then eggs and then chopped pecans
8. Flash fry until golden brown
