It's always hard to find a Thanksgiving vegetable dish that's not overshadowed by all of the wonderful, fall tastes on your table. Here's one that will have your guests asking for seconds. Makes 4 servings
Start to Finish: 20 minutes
1 lb asparagus spears - tips
Salt and pepper - to taste
2 tablespoons olive oil
1/4 cup pine nuts
3 cloves garlic - minced
1/4 cup grated parmesan
1) Salt and pepper asparagus and saute in olive oil over medium heat for 5 - 6 mins,
stirring often.
2) Add garlic and pine nuts. Continue cooking and stirring for 2 minutes.
3) Remove from skillet and sprinkle with parmesan.
