Tradition. That's what Hanukkah is all about. The Festival of Lights is celebrated in honor of the re-dedication of the Holy Temple in Jerusalem in the 2nd century B.C. Candles are lit for eight nights to remember the menorah in the temple that miraculously stayed lit for eight days even though there was only enough oil to burn for one day. The potato latke or potato pancake is the most popular Hanukkah food.
Here's a traditional latke recipe that comes out perfect every time! It comes courtesy of Lisa Wexler, co-author of the book, “Secrets of a Jewish Mother”.
Matzah Meal
1 Egg
6 White Potatoes
1 tsp Salt
Vegetable Oil (do not use any other kind of oil)
1 onion, if desired
1. Peel 6 white potatoes, cut them in half and boil them in water until soft.
2. Put cooked potatoes in a bowl. Add one egg, one grated onion if desired, and 1 tablespoon from the "dirty" water you boiled the potatoes in. ( you can use clean water too).
3. Add salt.
4. Mix together so it is lumpy.
5. Hand make thick pancakes and roll them in matzah meal on both sides.
6. Heat up 1/2 inch of vegetable oil on medium.
7. Fry the pancakes until crispy brown on both sides.
