Lemon Curd and Yogurt Fool with Crushed Berries

A “fool” is a traditional English dessert typically made with whipping cream mixed with crushed fresh fruit. This is my modern riff, made lighter and even more delicious with ultra-thick fat-free Greek yogurt. Look for the lemon curd where jams and jellies are sold in the supermarket.

1 12-ounce jar lemon curd

2 cups plain fat-free Greek-style yogurt (e.g., Fage or Oikos)

2 cups fresh raspberries or blackberries

2 tbsp powdered sugar

Put the lemon curd and yogurt into a bowl. Fold together for a rippled effect. Divide the mixture between four glasses and chill.

Mix raspberries and powdered sugar together and gently crush, then spoon with their juices over the chilled mix and serve. Makes 4 servings.
