Here's a perfectly delicious salad to help you celebrate the upcoming holiday and every other barbecue weekend! It's 100% vegetarian and 100% full of that smoky bacon taste.
Makes 4 servings
Shallot Dressing Ingredients:
4 shallots
8 tablespoons olive oil
3 tablespoons rice wine vinegar
3 tablespoons sugar or agave sweetener
1 tablespoon salt
Shallot Dressing Directions:
Preheat oven to 450 degrees. Wash and peel skins off shallots. Drizzle two tablespoons of olive oil over shallots and then sprinkle salt over them. Place on sheet pan and cover pan with foil. Roast for 25-30 minutes. After removing from oven, allow shallots to cool, then chop into small pieces. Mix shallots with the remaining six tablespoons of olive oil, vinegar, and sugar or agave sweetener.
Salad Ingredients:
1 package of Lightlife Smart Bacon
10 ounce package of fresh spinach
1/2 cup dried cranberries
1 cup tomatoes (diced)
1/3 cup pistachios (shelled)
1/3 cup gorgonzola cheese
2 tablespoons vegetable oil
Salad Directions:
While the shallots are roasting, fry the Lightlife Smart Bacon in a skillet with vegetable oil on medium-high heat for two to three minutes. Cool Smart Bacon® and then chop. Mix with the other salad ingredients. Toss dressing and salad just before serving.
