Trade your usual baked potato for a seasonal, golden sweet potato. Sweet potatoes owe their deep orange color to the beta carotene they contain and they’re also a reliable source of antioxidants and Vitamin A.

Adding more sweet root vegetables, like sweet potatoes to your diet can satisfy a sweet tooth naturally and diminish sugar cravings while also keeping you grounded during the cold winter months.

Try them steamed, roasted or baked simply dressed with coconut oil and sea salt or your choice of herbs and spices. They make a perfect side dish or snack.

This simple dish takes only minutes to prepare and is both pleasantly filling and warming.

Sweet Potato Mash

1 sweet potato per person

1 teaspoon coconut oil per sweet potato

1 fresh thyme teaspoon

Sea salt to taste

Cut sweet potatoes keeping skins intact into pieces and steam over boiling water in a steamer basket. Transfer to a bowl and mash with a fork. Add coconut oil, sea salt and thyme and continue mashing and mixing until the potatoes reach desired consistency.
