Who rules the grill in your backyard? Does the man of the house have a tendency to burn the burgers? Does the lady of the house serve up too much pink chicken? You don't want to ruin the day with under cooked or over-charred eats.
Here's how chef Tim Cranis from Serve All Catering remains a top grilling master and avoids disasters.
-
Make sure your grill is clean and ready to go. A good brush for cleaning before and in between food items is important for safety, as well as maximum flavor from your foods. For example, brush grill after cooking meat and before putting vegetables on the rack.
-
Make sure all your ingredients are ready and available to you near the grill. Also make sure you have enough charcoal or propane; running out in the middle of cooking is never a good thing!
-
Cook on medium heat! This allows the flavors to incorporate from the grill into the meat/chicken for the best flavor. It also stops food from cooking too fast and from getting too well-done.
-
When grilling chicken wings, place them directly over the heat, turning them every 3-4 minutes until done. Brush the chicken with the sauce after the first 10 minutes of cooking and keep brushing until tender and glazed.
