Wolfgang Puck Crispy Chicken Finger Roll

I love cooking with my daughter. It's so cute watching her put on her apron and helping me make dinner. I was excited to see that Levy Restaurants (located in Downtown Disney® at Walt Disney World Resort) is putting on a three-part Kids Cooking Class on Saturday, June 24th from noon until 3 p.m. The talented chefs of Wolfgang Puck Café, Portobello Restaurant and Fulton’s Crab House are leading the classes. Kids learn how to make:

  • Crispy Chicken Finger Roll – Wolfgang Puck Café

  • Ravioli Gigante – Portobello Restaurant

  • Chocolate Chip Cookie Sundae – Fulton’s Crab House

Here's one of the recipes for you to try at home.  This is a kid friendly sushi roll.


Maki Sushi - Crispy Chicken Finger Roll

Makes 1 Roll or 6-8 pieces

Ingredients for Roll:

  • ½ sheet Nori

  • 3 ½ oz Sushi Rice

  • 2 oz Chicken finger

  • ½ oz Cream Cheese

  • 1 oz honey mustard

Sushi Rice:

  • 2 cups Japanese Short Grain Rice

  • 2 ¼ cups Water

Rice Vinegar Mix:

  • 1 cup  Rice Vinegar

  • ½ cup  Sugar

  • 2 tbsp  Kosher Salt

Honey Mustard Sauce:

1 ounce each of:

  • Honey

  • Brown sugar

  • Yellow mustard

  • Dijon mustard

  • Mayonnaise

Mix to combine.

Tools:

  1. A makisu, which is a bamboo rolling mat

  2. Water for wetting your hands

  3. Plastic wrap

  4. Wooden Mixing Bowl

  5. Wooden or plastic large spoon

Method:

  1. Wrap the makisu with plastic wrap.

  2. Lay half sheet of Nori on Makisu, shiny side down.

  3. Wet your hands so that the rice does not stick to them.

  4. Spread the rice on the Nori from left to right and then press toward the top and bottom to cover the Nori evenly.  Be sure that the edges and corners are completely covered.

  5. Place the filling lengthwise down the center of the sheet.  The ingredients should be even from end to end.

  6. Line up the edge of the sheet with the edge of the makisu closest to you.

  7. Wrap the sushi sheet completely over on itself using the makisu.

  8. Tuck the edge of the makisu under sushi and then allow the end to come free.

  9. Using both hands, roll the makisu forward about 1 ½ inches.

  10. Tighten and shape the roll by lightly applying pressure on all three sides evenly.

  11. Slice and serve with honey mustard sauce
