Mexican Fiesta Breakfast Rolls

The savory  breakfast roll comes from my childhood love of making cinnamon rolls.  My mother made her own and I enjoyed helping her roll the yeast dough and layer it with the delicious ingredients.  The savory roll is a child friendly adventure in baking at my home, especially because this one uses semi-homemade items. I make sure that I have everything set out in individual bowls to make their layering fun and easy. The variety of options available in your local market for freshly made sausage makes choosing one for this recipe a snap, since the seasonings are mixed right in to the meat.  Make sure to use raw sausage.  Have fun at the market with your children choosing the cheese,salsa and meat for this simple yet nutritious Bfast meal.

 

Pre heat the oven to 350
Prep time 40 minutes
bake time 35 minutes
makes 2 dozen classic sized savory meals

Filling  
1lb. Hot pork or turkey sausage.

Saute over medium heat without the use of oil in a 12 inch non stick saute pan, break up with a wooden spoon over medium heat 12-15 minutes or until well browned.  I like my meat browned and golden as apposed to grey, this makes for better flavor and presentation.  Drain the meat in a wire colander that has a plate and a paper towel on it to catch the drippings, continue to break up the sausage in the colander to release additional grease, transfer to a 6 cup capacity bowl, for easy assembly line preparation.
Hash browns 1lb bag frozen shredded potatoes 
Using the same pan add one teaspoon olive oil and the bag of potatoes in an even layer press down firmly with a spatula and let them brown undisturbed  for 7 minutes, until golden brown on the bottom.  Sprinkle the top with 1/2 teaspoon chili powder and a pinch of salt and pepper each.  The non stick pan will help you from having to add additional oil which is traditionally the case in making hash browns.  We are just giving them a little color and a bit more flavor, after 7 minutes mix the potatoes around to give the potatoes an even brown color. 12-15 minutes total cook time. transfer to a 6 cup capacity bowl

1 15 oz. package pre-made ready to roll pie dough
1 tube fresh made easy herbs in a tube, cilantro
1 cup refried beans transfered to a bowl
1 lb. browned turkey meat
2/3rds cup pre-made salsa
1 lb. browned hash browns
1 8 oz. block of monterey Jack cheese with Jalapeno peppers crumbled by hand into a bowl



Assembly line

Lay the 2 sheets of pre-rolled pie dough onto a  cutting board that fits the entire round of the dough.

Using a spatula spread 2 tablespoons per sheet of the cilantro, herbs in a tube
next spread 1/2 cup re-fried beans to each sheet
spread 1 cup browned sausage per sheet
1/3 cup pre-made salsa per sheet
1 cup hash browns per sheet
1 cup crumbled cheese per sheet.

Spray your 1 dozen classic cupcake pan with smart balance olive oil spray.
Roll the pie dough starting on one side and firmly roll into a log.  
Cut the log into 6 2 inch slices making sure not to disturb the roll and contents.
Place the cut roll into the pan, cut side up and press down gently to fill the hole. You have 2 logs so you will have 12 rolls.

Bake uncovered for 35 minutes in a 350 degree oven.  Let cool 5 minutes and gently loosen the edges with a knife and remove.
These are eaten out of hand beautifully, or plated with a side of guacamole and a salad for a brunch,  or served along side your favorite morning eggs served with salsa.
