You feel like you’re baking when you step outside,  so we are officially taking you off cooking duty. 

All of these recipes are bake, sauté, broil, boil and even grill-free. Cool, right? You won’t miss the heat, though. Each one of these is filled with flavor and is so elevated, you can pretend you slaved all day if you serve to guests (and we think you should!). 

We’ll actually start in the morning since, well, it comes first.

How smart is this? No-cook oatmeal you make ahead and keep in the refrigerator overnight. Wait…there’s so much more. It’s prepped in portable grab-and-go containers AND made in super creative flavor combos like Cherry Garcia, Mandarin Orange and Pineapple Coconut.

No-Bake Breakfast Bars

We added these peanut butter and coconut milk bars because they have only four ingredients and pack 10-13g of protein depending on the serving size. You can also lower the fat content by playing around with the type of peanut butter.

We love how easy they are to make and figure they are great for those mornings when you just have to eat on the run.  Our thoughts: get crazy and throw in your favorite fruits and nuts, too.

Tropical Shrimp Ceviche

By definition, ceviche is typically raw seafood garnished and served as an appetizer. In this version, the creator uses pre-cooked shrimp for those who can’t handle raw, but you can substitute with your favorite seafood.

The creator amps up the clean flavors with oranges, mangos and grape tomatoes to make the perfect cold appetizer on a hot day. This is paleo friendly, to boot…

Cheesy-Prosciutto Breadsticks

We know these look super simple, but that’s what we LOVE about them. You slather the cheese on the meat and then wrap them around the breadsticks. The fact that you can eat the stick the meat is on? BRILLIANT in our book. Who wants to work for their food in the heat, anyway?

No-Mayo Broccoli Salad

This is no ordinary salad. This is a sophisticated take, no lettuce in sight. Along with the bite-size broccoli, you’ve got chewy cranberries,  bright blueberries and crunchy apples. Binding it all together? A healthy make-your-own poppyseed dressing. This healthy, colorful salad will become a staple, we’re sure.

Avocado Caprese Wrap

A wrap is an easy choice on a hot day, but this is a modern, grown up twist on the twisted sandwich. If you’re like us, you probably eat enough Caprese salad during the hot months to say that you’re Italian regardless of your nationality.

But, there’s something about adding creamy avocado to the tomatoes and mozzarella and wrapping it all together that seems to elevate the summer staple to a whole new level.

Creamy Green Gazpacho

Who says soup’s just for winter? Gazpacho is the perfect cold dish for sizzling hot days. The green version is ideal right now since all of the veggies are in season.

We like this one because it goes off the beaten Gazpacho path a bit and adds in avocado to make it extra creamy. That may make it non-traditional, but we don’t care. The jalapeños cut through the creaminess just enough to give it nice kick.

Throw in some shrimp, and you’ve got yourself a main course. We say olé!
