Tomato, Nectarine and Basil Salad
a. Medium to large size Red Tomatoes, 1 pound
b. Nectarines, 1 pound
c. Sherry Vinegar, 2 Tblsp.
d. Extra Virgin Olive Oil, 5 Tblsp.
e. Kosher Salt & Fresh Ground Black Pepper, to taste
f. Fresh Basil Leaves
Directions: Cut the tomatoes and nectarines into wedges and place in a shallow bowl or large platter. Sprinkle on the vinegar, olive oil, salt and pepper, and basil leaves. Toss the salad.
